I love breakfast! There are just so many delicious options to choose from. Some days I like a savory, veggie and egg scramble or avocado toast with a runny egg and sprouts. While other days I want a big warm bowl of peanut butter and banana oats.

When I can’t decide {which happens often} I usually make one slice of avocado toast with an egg and one slice of peanut butter toast with banana; the best of both worlds!

But outside of the weekends, it’s rare I actually have time to make and enjoy breakfast before rushing out the door to my group fitness class. I pretty much live off pre-prepped and packed breakfast meals {usually in the form of egg muffins}.
