The Dungeness crab are back, and as the 2017 season gets underway, we have a handful of scrumptious recipes that from crab cakes to bisque to cobbler.
Mendocino’s First Prize Crab Cakes
Chef Margaret Fox of Harvest Market in Fort Bragg knows how to make a winning crab dish. Her crab cakes even took top prize at the 2016 Mendocino Crab, Wine and Beer Festival.
“There’s nothing quite as fun as crab,” Fox told us in January. “First of all, it’s absolutely delicious. It has the pizzazz as a seasonal dish, and so few things are truly seasonal these days. Our crab is such a West Coast thing — the fact that we trap it here, it’s sort of like OUR ingredient. It ups the ante in terms of specialness.”

Cioppino & Garlic Bread
Bibby Gignilliat, the founder of San Francisco’s Parties That Cook, makes one of our favorite riffs on the fish stew theme. Her easy Cioppino recipe uses Dungeness crab, plump shrimp, clams and red snapper. Serve it with warm sourdough garlic bread that’s been slathered with a compound butter. So easy and so addictive.
Dungeness Crab Bisque
There are other crab-inspired soups to explore, too. At San Francisco’s Bi-Rite Market, the Dungeness Crab Bisque has its own cult following. This creamy, lovely concoction gets added flavor from fresh tarragon and preserved Meyer lemons. Don’t have preserved lemons? No worries. Fresh Meyer lemon zest makes a great substitute.

Renowned Baltimore chef Nancy Longo uses seafood from Chesapeake Bay for her famous crab cake recipe, but we’ve made them with Dungeness crab. Sorry, Baltimoreans, but we think the Dungeness rocks in this recipe. Unlike most crabcake recipes, this one uses crumbled crackers, which melt away in buttery fashion.
There’s no doubting Mendocino’s love for Dungeness. Their chefs go all out for their annual crab festival. At Mendo Bistro, the menu includes crab in many forms, including a distinctive Dungeness Crab Cobbler that is served with a puff pastry shell perched on top. You could skip that step, of course, but it’s so easy to do and so delicious dunked into the creamy crabby goodness below, we wouldn’t dream of omitting it.
