Something Savory: Lemony Tuna Toss

Here’s a
delicious, healthy, and filling mid-day meal. It’s easy to make and takes only about 10-15 min.


2 cans (4-5 oz) tuna

1 can artichoke hearts – chopped
or Olives

20 halved grape tomatoes

1 can chickpeas; or use a cup of
your favorite nuts

1/3 cup chopped red onion

2 Tbsp lemon juice

1 Tbsp olive oil


Mix all ingredients in a large
bowl. You can also add some spices, if your family is up to it. Serve with a
whole-wheat roll or toast. This
makes about 4 servings; you can double the amount of ingredients to have
leftovers for the next day’s lunch, or to serve it
as a nice appetizer or side dish for tomorrow’s dinner.

Something Sweet: Two Minute Chocolate Peanut Butter Cake

This is an amazing recipe for
single-serving peanut butter cake, for those instances when you, a super busy
and, can we add, sometimes stressed mom, need a sweet & quick fix, a treat
to help you unwind and smile. Or,
it makes a great dessert for you and your loved one to enjoy during some
romantic after dinner time, when kids are finally in bed. Of course, you can make it for your
kids, too; after all, what a few minutes of your time to reward them for being
such good kids at home or school.
And, yes, it takes only 2-3 min to make it!


1 egg
1 Tbsp brown sugar
2 Tbsp peanut butter
1 Tbsp flour
1 Tbsp cocoa
1/4 tsp baking powder
a small handful of chocolate chips, semi-sweet or dark chocolate


In a small bowl, stir the egg,
brown sugar, peanut butter, flour, cocoa and baking powder with a fork. Stir in
the chocolate chips and pour batter into a greased ramekin or mug. Microwave
for 1 minute; depending on your microwave, you may need only 30 sec. Eat
straight from the ramekin or mug, or invert onto a plate. Serves 1.

Non-Alcoholic Chocolate Cocktail

Such a smooth deliciousness, ready
in 5 min! This
creamy, indulgent and non-alcoholic cocktail is perfect for kids and adults,
for all occasions, but especially when it involves celebrations and


150g milk chocolate bar

A little over 7 ounces milk

2 ¼ ounces vanilla syrup

3 squares of milk chocolate

Place the milk in a non-stick
saucepan and heat on a gentle simmer.

Break half of the chocolate bar
into squares and add to the milk, then stir it gently and continuously to
create a liquid chocolate mixture.

Allow to cool for one hour at room
temp, then store in the fridge.

Pour the cool milk mixture into a
cocktail shaker and add the vanilla syrup. Shake over ice for 1 min and double-strain
into martini glass.

Make an insertion in the back of
the chocolate squares and place one at an angle on the edge of each martini
glass. It serves 3.

You can always try it with dark chocolate, too.
